Peas

Description
Shell, snow, and sugar snaps (try that five times fast) are some of the well-known varieties of the genus Pisum.

Preparation
Snow peas are flatter and a slight cooking will bring out their flavor, while sugar snaps are plumper, more curved and just as delicious raw or cooked. Take care to not overcook either, but for hot peas, steam snow peas for about 3 minutes, snaps for about 4, or add them to stir-fries for just long enough to be heated. Shell peas are much like the snaps, but you don’t eat the shells – the cooking times are similar. In spite of some of these technical differences, each of the peas are good sources of carbohydrate, fiber, and protein.
