Broccoli

Description
A relative to the wild cabbage, broccoli contains vitamins A, C, calcium, potassium and iron, as well as anti-oxidant properties.

Preparation
The broccoli’s heads, or florets, are the plant’s immature flower buds, which, if left attached to the plant, would bloom and set seeds. Before preparing this health-giving vegetable, it’s a good idea to soak it in cold, lightly salted water with the floret upside to dispel any stow-a-ways.

Broccoli can be eaten raw, both crown and stalk, although some people recommend that it be cooked to aid in digestion. Caraway or dill sprinkled with the broccoli while it cooks will also help digestion.
