Description
Leeks, which are alliums like onions, garlic, and chives, are members of the lily family.
Preparation
Be sure to wash them well, as leeks hold onto grit from the fields; but if you want to store them, keep them dry with leaves intact, and they'll be good for a couple of weeks. Leeks cook to a softness and milder flavor than onions, but can serve as a substitute in most recipes.
One of the surest ways to use leeks well is in soups. They're also delicious with mashed potatoes, quiches, grains and beans.
