Description
It's the sulphur that makes you cry. It’s also the sulphur that can make an onion a bit bitter when cut and stored.
Preparation
If you love their strong flavor, cook the onions for less time, longer cooking dampens the onion-taste. Onions can be prepared in almost any fashion - boil, sauté, steam, stir-fry, bake, grill or roast (long baking or roasting will bring out the intrinsic sweetness of the onions). And they're good for you: some recipes call for a hot blend of milk, honey and onion to treat a sore throat, but a nice, warm soup with onion in the broth works, too.
