Celeriac (celery root)

Description
Celeriac, which lost favor in the American cuisine mainstream because of its appearance, is a source of carbohydrates, vitamin C, phosphorous and potassium. Alternatively known as celery root, celeriac is mainly harvested for its oddly shaped, bulbous root, but its celery-like stalks are edible as well. It’s also said to be good for those with coughs or colds, joint stresses, and digestive or kidney issues.

Preparation
Celeriac tastes like concentrated celery, making it an excellent addition to soups. The tough exterior of celeriac can be soaked and scrubbed of dirt, or peeled if it’s too tough for your tastes, and it can be eaten raw or cooked.
