Description
This sturdy vegetable is a winter stalwart. Keep it's outer leaves on before storing and it can last for a couple of months in your fridge, even longer in a root cellar. On average, a one-cup serving of steamed cabbage has only 15 calories. But don't let this low-cal label fool you, cabbage is also full of vitamin A and C, calcium, iodine, iron, magnesium, sulfur, and potassium; it's a nutrient heavy hitter. Cabbage is also known to be beneficial for digestion and a sprinkling of caraway or dill will further enhance this property.
Preparation
Slice a whole cabbage into quarters, halve those to make wedges, then cut into thin strips for salads; use larger pieces for steaming, boiling and soups.
